Ingredients
  

  • 2 slices brioche or thick toast bread
  • 2 large eggs
  • 1 slice Gouda or cheddar cheese
  • ½ avocado sliced
  • Handful cherry tomatoes sliced
  • Handful iceberg lettuce chopped
  • Butter or oil for cooking
  • Salt and pepper to taste

Equipment

  • Medium non-stick skillet
  • Spatula
  • Whisk or fork
  • Knife for slicing
  • Measuring spoons

Method
 

  1. Heat a medium non-stick skillet over medium heat. Add a pat of butter or drizzle of oil and let it melt.
  2. Crack eggs into the pan. Whisk lightly with a fork right in the pan until scrambled. Season with salt and pepper. Let cook 1 minute until edges set.
  3. Place both slices of bread on top of the eggs. Press down gently. Add cheese slice on one bread piece.
  4. Layer avocado, tomatoes, and lettuce on the cheese-topped bread.
  5. Carefully slide spatula under the eggs and bread. Flip one bread slice over the other to close the sandwich. Fold any overhanging egg inward.
  6. Press down with spatula and cook 2 minutes per side until bread is golden and crispy, cheese melts.
  7. Slide onto plate. Cut in half and dig in hot.

Notes

  • Use non-stick pan to avoid sticking-key for easy flip.
  • Butter makes bread extra crispy; oil works too.
  • Add bacon or ham under cheese for more flavor.
  • Cook on medium heat so eggs don't burn.
  • Best eaten fresh; reheat in pan if needed.
  • Customize with spinach or hot sauce for kick.
