- Boil the egg noodles in salted water until tender. Drain well and set aside for haluski style noodles texture.
- Melt butter in a large skillet over medium heat. Add sliced onion and cook slowly until soft golden and lightly caramelized.
- Add the drained noodles to the skillet. Toss gently until coated in butter and warmed through.
- Reduce heat to low. Add cottage cheese salt and black pepper then stir gently until creamy and evenly combined like buttered cottage cheese noodles.
- Remove from heat and sprinkle chopped parsley over the top before serving.
Notes
Add cottage cheese over low heat to keep it creamy instead of melting completely into the noodles.
