- Set oven rack 6 inches from broiler. Preheat broiler. Line baking sheet with foil.
- Place roll halves cut-side up on baking sheet. Spread Dijonnaise on one half. Layer turkey, Swiss cheese, and ham on top.
- Spread mayonnaise on the other half. Layer roast beef, tomato slices, and Muenster cheese on top. Add red onion if using.
- Broil open-faced 4 minutes until cheeses melt, bubble, and ham edges crisp. Watch closely to avoid burning.
- Remove from oven. Close sandwich halves together. Serve hot.
