Method
- Heat filtered water to about 175°F, not boiling.
- Add loose green tea to a teapot.
- Pour a small amount of hot water over the tea, swirl gently and discard this rinse.
- Add fresh spearmint leaves to the teapot.
- Pour the remaining hot water into the teapot.
- Stir in white sugar.
- Steep for 4 to 5 minutes until the tea turns pale golden and fragrant.
- Pour into a mug from a slight height to mix and aerate the tea.
Notes
Never boil green tea leaves, as high heat makes the tea bitter and flat.
