Ingredients

  • 1 cup filtered water
  • 1 tsp loose green tea
  • 1/4 cup fresh spearmint leaves
  • 1 tbsp white sugar

Equipment

  • Electric Kettle
  • Teapot

Method

  1. Heat filtered water to about 175°F, not boiling.
  2. Add loose green tea to a teapot.
  3. Pour a small amount of hot water over the tea, swirl gently and discard this rinse.
  4. Add fresh spearmint leaves to the teapot.
  5. Pour the remaining hot water into the teapot.
  6. Stir in white sugar.
  7. Steep for 4 to 5 minutes until the tea turns pale golden and fragrant.
  8. Pour into a mug from a slight height to mix and aerate the tea.

Notes

Never boil green tea leaves, as high heat makes the tea bitter and flat.
