Masala Chai

Ingredients
  

  • 1 cup filtered water
  • 1 cup whole milk
  • 1 black tea bag
  • 2 green cardamom pods lightly crushed
  • 1 small cinnamon stick
  • 2 whole cloves
  • 1/2 inch fresh ginger sliced
  • 1 tbsp sugar

Equipment

Method
 

  1. Add filtered water, ginger, cardamom pods, cinnamon stick and cloves to a saucepan.
  2. Bring to a boil, then lower the heat and simmer for 5 minutes until fragrant.
  3. Add the black tea bag and simmer for 2 minutes until the liquid darkens.
  4. Pour in whole milk and bring back to a gentle boil.
  5. Reduce heat and simmer for 2 to 3 minutes until the color turns rich brown.
  6. Stir in sugar until fully dissolved.
  7. Strain the chai into a mug to remove spices and tea bag.

Notes

Let the milk boil briefly with the tea to fully develop body and spice depth.
