Method
- Add filtered water, ginger, cardamom pods, cinnamon stick and cloves to a saucepan.
- Bring to a boil, then lower the heat and simmer for 5 minutes until fragrant.
- Add the black tea bag and simmer for 2 minutes until the liquid darkens.
- Pour in whole milk and bring back to a gentle boil.
- Reduce heat and simmer for 2 to 3 minutes until the color turns rich brown.
- Stir in sugar until fully dissolved.
- Strain the chai into a mug to remove spices and tea bag.
Notes
Let the milk boil briefly with the tea to fully develop body and spice depth.
