Method
- Chill a rocks glass and lightly rim with fine sea salt.
- Combine grilled pineapple juice, lime juice, zero-proof agave spirit, agave syrup, chili tincture and achiote powder in a shaker tin.
- Fill the shaker with ice.
- Shake hard for 12–15 seconds until well chilled and integrated.
- Double strain over fresh ice in the prepared glass.
- Garnish with a charred pineapple wedge and a light chili dusting.
Notes
- Char the pineapple slices directly over a gas flame or grill pan those caramelized edges add authentic al pastor depth without extra sweetness.
