Pat steak cubes dry paper towels. Season 1 tsp salt, ½ tsp pepper from measuring spoons.
Heat vegetable oil in large skillet over high using measuring spoons till smoking. Add steak batches with tongs, no crowd. Sear 3 minutes undisturbed crusty brown. Flip tongs, sear 2 minutes. Remove plate all done.
Lower heat medium. Add minced garlic to skillet, stir wooden spoon 30 seconds fragrant.
Pour honey, soy sauce, sesame oil using measuring cups. Whisk cornstarch water slurry, stir in. Simmer 2 minutes bubbling thick.
Return steak to skillet with tongs. Toss wooden spoon 1 minute full glossy coat. Pull heat.
