- Chop bacon into ½-inch pieces using knife.
- Heat large skillet over medium. Add bacon pieces. Cook 5 minutes till crispy rendered using wooden spoon.
- Stir diced onion into bacon fat. Cook 3 minutes soft golden. Add minced garlic, stir 30 seconds fragrant.
- Add trimmed green beans with tongs. Sprinkle salt, pepper from measuring spoons. Sauté 4 minutes tossing till bright green tender-crisp.
- Pull heat. Toss final even coat. Serve hot.
Notes
- Thick bacon holds crunch; turkey bacon leaner less fat. Blanch thick beans 2 minutes first.
- Bacon fat flavors all; save extra drippings.
- Fridge 3 days, reheat skillet dry 3 minutes.
