Ingredients
  

  • lb fresh green beans trimmed
  • 6 slices thick-cut bacon chopped
  • 1 small onion diced
  • 2 garlic cloves minced
  • ½ tsp salt
  • ¼ tsp black pepper

  • Tongs
  • Measuring spoons
  • Knife

Method
 

  1. Chop bacon into ½-inch pieces using knife.
  2. Heat large skillet over medium. Add bacon pieces. Cook 5 minutes till crispy rendered using wooden spoon.
  3. Stir diced onion into bacon fat. Cook 3 minutes soft golden. Add minced garlic, stir 30 seconds fragrant.
  4. Add trimmed green beans with tongs. Sprinkle salt, pepper from measuring spoons. Sauté 4 minutes tossing till bright green tender-crisp.
  5. Pull heat. Toss final even coat. Serve hot.

Notes

  • Thick bacon holds crunch; turkey bacon leaner less fat. Blanch thick beans 2 minutes first.
  • Bacon fat flavors all; save extra drippings.
  • Fridge 3 days, reheat skillet dry 3 minutes.
