Ingredients
  

  • 2 lb fresh green beans trimmed
  • 6 slices bacon chopped
  • 1 large onion sliced
  • 4 cups chicken broth
  • ½ tsp salt
  • ¼ tsp black pepper

Method
 

  1. Chop bacon into 1-inch pieces using knife.
  2. Heat large pot over medium. Add bacon pieces. Cook 6 minutes crispy rendered using wooden spoon.
  3. Add sliced onion to bacon fat. Cook 4 minutes soft golden.
  4. Add trimmed green beans to pot with tongs. Sprinkle salt, pepper from measuring spoons. Pour chicken broth over.
  5. Bring to boil. Cover lid tight. Reduce heat low simmer 40 minutes till beans fork-tender collapsed.

Notes

  • Low slow key silky not mushy. Fresh broth amps flavor; water works basic.
  • Pot liquor gold; save cornbread dip. Ham hock subs deeper smoke.
  • Fridge 4 days, reheat simmer splash broth.
