Ingredients
  

  • 8 oz Thin Wheat Noodles
  • 4 Cloves Garlic
  • 1 tbsp Red Chili Flakes
  • 2 tbsp Light Soy Sauce
  • 1 tsp Dark Soy Sauce for color
  • 1 tsp Granulated Sugar
  • 1 tbsp Rice Vinegar
  • 3 tbsp Neutral Oil
  • 1 tsp Toasted Sesame Oil
  • 2 Green Onions thinly sliced
  • 1 tsp Toasted Sesame Seeds

Equipment

  • Saucepan

Method
 

  1. Cook the wheat noodles in salted boiling water until tender with a slight chew. Drain and set aside keeping a tablespoon of noodle water.
  2. Place minced garlic, chili flakes and green onions in a heatproof bowl. This base builds the flavor for chili oil noodles recipe.
  3. Heat neutral oil in a small saucepan until shimmering and very hot. Carefully pour the hot oil over the garlic mixture and listen for the immediate sizzle.
  4. Add soy sauce, dark soy sauce, sugar and rice vinegar to the bowl and stir until combined.
  5. Add cooked noodles and toss thoroughly until every strand is coated and glossy like classic hot oil noodles. Add a splash of reserved noodle water if needed.
  6. Finish with sesame oil and sprinkle sesame seeds before serving.

Notes

Pour the oil immediately when smoking hot so garlic blooms instantly creating deep aroma without burning.
