Ingredients
  

For the Meatloaf:
  • 1 lb ground beef 80% lean
  • ½ cup breadcrumbs or oats for gluten-free
  • 1 egg beaten
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • ½ cup milk
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
For the Glaze:
  • ¼ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp mustard

Method
 

Prepare the Meatloaf
  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, beaten egg, onion, garlic, milk, Worcestershire sauce, salt, pepper, oregano, and thyme. Use your hands to mix everything together until just combined-don’t overmix!
  3. Transfer the meat mixture into a 9x5 loaf pan, pressing it down gently to form an even loaf shape.
Make the Glaze
  1. In a small bowl, mix together the ketchup, brown sugar, and mustard to make the glaze.
  2. Spread the glaze evenly over the top of the meatloaf, using a spoon or basting brush.
Bake the Meatloaf
  1. Place the loaf pan on a baking sheet to catch any drips, then bake the meatloaf in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
  2. After 1 hour, check the meatloaf. If you like a crispy top, broil for an additional 2-3 minutes until the glaze is bubbling and caramelized.
Rest and Serve
  1. Let the meatloaf rest for 10 minutes before slicing. This will help the juices redistribute and keep the meatloaf moist.
  2. Slice the meatloaf and serve with your favorite sides, such as mashed potatoes or a simple salad.

Notes

  • Storage: Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
  • Reheating: Reheat slices in the microwave or in a 350°F oven for 10-15 minutes.
  • Safety: Make sure the meatloaf reaches an internal temperature of 160°F to ensure it’s fully cooked. Always handle raw meat with care to avoid contamination.
