Method
- Chill a rocks glass in the freezer until cold.
- Combine añejo tequila, demerara syrup, chocolate bitters and orange bitters in a mixing glass.
- Fill the mixing glass with cold ice.
- Stir gently for 20–25 seconds until the mixture is chilled and slightly diluted without losing structure.
- Strain over a large clear ice cube in the chilled rocks glass.
- Express a thick orange peel over the drink, coating the surface with oils, then rest it against the ice.
Notes
- Use minimal syrup-chocolate bitters already add perceived sweetness, and too much sugar will mute the tequila’s agave character.
