Ingredients
  

For the Chicken:
  • 4 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ½ cups breadcrumbs preferably Italian
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for frying
For the Sauce:
  • 2 cups marinara sauce store-bought or homemade
  • 1 teaspoon dried basil
  • ½ teaspoon garlic powder
For the Cheese:
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese

Method
 

Prepare the Breading Station:
  1. Take a shallow bowl and add 1 cup of all-purpose flour.
  2. In a second shallow bowl, crack 2 large eggs and beat them with a fork until well combined.
  3. In a third shallow bowl, mix 1 ½ cups of breadcrumbs with ½ cup of grated Parmesan cheese, 1 teaspoon garlic powder, 1 teaspoon onion powder, and salt and pepper to taste. Mix everything until evenly combined.
Prepare the Chicken:
  1. Set your oven to 375°F.
  2. Place the 4 chicken breasts on a clean cutting board.
  3. Coat each chicken breast in the flour mixture, making sure to cover both sides completely. Shake off any excess flour.
  4. Dip the floured chicken breast into the egg mixture, ensuring it is fully coated.
  5. Press the chicken into the breadcrumb mixture, making sure the chicken is evenly coated with breadcrumbs on both sides.
Fry the Chicken:
  1. Place a skillet on the stove and add 2 tablespoons of olive oil. Heat the pan over medium heat until the oil is hot but not smoking.
  2. Add each breaded chicken breast to the skillet. Fry for 4-5 minutes on each side until the breading turns golden brown. Use tongs to lift the chicken and check the bottom—it will be crispy and golden. You’re not fully cooking the chicken yet, just making it crispy. After frying, transfer the chicken to your prepared baking sheet.
Prepare the Sauce:
  1. Heat the Sauce: In a small saucepan, pour 2 cups of marinara sauce. Add 1 teaspoon dried basil and ½ teaspoon garlic powder. Stir to combine and let the sauce simmer over low heat for 2-3 minutes to warm it up.
Assemble the Dish:
  1. Spoon a generous amount of marinara sauce over each piece of fried chicken. Be sure to cover the chicken completely, but leave the edges exposed so the breading stays crispy.
  2. Sprinkle 1 ½ cups of shredded mozzarella cheese evenly over the chicken, followed by a little more grated Parmesan cheese (about ½ cup).
Bake the Chicken Parmesan:
  1. Place the baking sheet with the assembled chicken in the preheated oven. Bake for 15-20 minutes or until the cheese is melted and bubbly, and the chicken reaches an internal temperature of 165°F (use a meat thermometer to check).
  2. When done, the chicken should be fully cooked through, and the cheese should be golden and slightly crispy on top.
  3. Once the Chicken Parmesan is out of the oven, let it rest for about 5 minutes.

Notes

  • For extra crispy chicken, you can bake the chicken for 5-10 minutes before adding the sauce and cheese.
  • Store leftovers in an airtight container for up to 3 days. Reheat in the oven for best results.
  • Use gluten-free breadcrumbs for a gluten-free version.
