Ingredients
  

  • 1 lb pizza dough store-bought or homemade
  • ½ cup unsalted butter melted
  • 6 garlic cloves minced
  • ¼ cup grated parmesan
  • 1 tsp Italian seasoning
  • 1 cup shredded mozzarella
  • ½ tsp salt

Method
 

  1. Let pizza dough sit room temp 30 minutes soft. Preheat oven 400°F. Line baking sheet parchment.
  2. Divide dough 12 equal pieces using knife. Roll each 8-inch rope on floured board with hands. Press 1 tbsp mozzarella into center rope. Knot loose pretzel style, tuck cheese ends inside.
  3. Place knots seam down on baking sheet 2 inches apart. Cover loose towel, rise warm spot 20 minutes puffy.
  4. Mix melted butter, minced garlic, parmesan, Italian seasoning, salt in bowl using measuring spoons till fragrant.
  5. Bake middle rack 12 minutes till deep golden. Pull sheet, brush hot knots generous garlic butter using pastry brush.

Notes

  • Store dough thaws fridge overnight. Fresh mozzarella melts gooiest.
  • Don't overproof or knots flatten. Extra butter dip bowl.
  • Freeze unbaked knots tray then bag; bake frozen add 3 minutes.
