Ingredients

  • 1 lb 450 g fresh green beans, trimmed. Choose thin, firm beans, since they cook evenly. If yours are thick, blanch them for 2 minutes first.
  • 3 tbsp unsalted butter. Salted butter works too; just halve the added salt.
  • 2 garlic cloves minced
  • 1/2 tsp kosher salt extra virgin
  • 1/4 tsp black pepper freshly ground
  • 1 tsp lemon zest optional but recommended. Stir it in off the heat so it stays bright.

Equipment

  • Large skillet
  • Tongs
  • Measuring spoons
  • Knife

Method

  1. Snap or trim the stem ends, rinse the beans under cold water, and pat them completely dry with paper towels.
  2. Heat a large skillet over medium-high heat. Add the butter and let it melt until foaming. The foam is your signal that the pan is hot enough.
  3. Stir in the garlic and cook for 30 seconds, just until fragrant and pale gold. Do not let it brown.
  4. Add the green beans, sprinkle over the salt and pepper, and saute for 6 to 8 minutes, tossing often, until bright green with lightly blistered spots and a tender-crisp bite.
  5. Take the pan off the heat, stir through the lemon zest, and serve immediately.

Notes

  • Storage: Refrigerate leftovers in an airtight container for up to 3 days.
  • Reheating: Warm in a skillet over medium heat with a splash of water. The microwave makes them rubbery.
  • Frozen beans: Thaw and pat very dry first. They release more water, so give them an extra minute in the pan.
  • Variations: Toss with toasted sliced almonds, crumbled bacon, or a shower of parmesan to make it your own.
