Method
- Bring a saucepan of water to a rolling boil and add tapioca pearls.
- Cook for 12 minutes until the pearls turn soft and chewy with no white center.
- Drain the pearls and toss them with brown sugar while warm until glossy.
- Heat 1 cup filtered water to boiling and steep the black tea bag for 4 minutes until deep amber.
- Remove the tea bag and let the tea cool to room temperature.
- Add ice cubes to a tall glass.
- Spoon the sweetened tapioca pearls into the glass.
- Pour the cooled tea over the ice.
- Add whole milk and stir gently to combine.
Notes
Use the tapioca pearls within one hour of cooking to keep their signature chew.
