Method
Prepare the Turkey Breast:
- Preheat your oven to 375°F (190°C).
- Pat the turkey breast dry with paper towels to ensure the skin crisps up nicely.
- Rub the turkey breast with olive oil, and season with salt, pepper, garlic powder, onion powder, and smoked paprika. If using, sprinkle fresh rosemary on top for added flavor.
Wrap the Turkey in Bacon:
- Lay the bacon strips out flat, slightly overlapping, on a baking sheet or large surface.
- Place the turkey breast on top of the bacon. Begin wrapping the bacon around the turkey breast, ensuring it’s tightly covered. Use toothpicks to secure the bacon at the ends or any spots where it may come loose.
- Optional: For extra crispy bacon, you can place the bacon-wrapped turkey on a rack in the baking sheet to allow air circulation.
Roast the Turkey Breast:
- Place the bacon-wrapped turkey breast on a baking sheet or roasting pan, and roast in the preheated oven for about 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F in the thickest part of the breast.
- Halfway through cooking, you can baste the turkey with the drippings from the pan to enhance flavor and moisture.
Rest and Serve:
- Once the turkey is cooked, remove it from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute and keeps the turkey tender.
- Slice the turkey and serve with your favorite sides like roasted vegetables, mashed potatoes, or a simple green salad.
Notes
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days.
- Reheating: Reheat slices in the microwave or oven at 350°F for 5-10 minutes, or until heated through.
- Tips: For an extra crispy bacon, you can broil the turkey breast for the last 5-10 minutes of cooking. Be sure to watch closely to avoid burning the bacon.
