Ingredients
  

  • 8 oz Wide Egg Noodles
  • 3 tbsp Unsalted Butter
  • 1 Small Yellow Onion
  • 1 cup Full-Fat Cottage Cheese
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tbsp Fresh Parsley

  • Wooden spoon

Method
 

  1. Boil the egg noodles in salted water until tender. Drain well and set aside for haluski style noodles texture.
  2. Melt butter in a large skillet over medium heat. Add sliced onion and cook slowly until soft golden and lightly caramelized.
  3. Add the drained noodles to the skillet. Toss gently until coated in butter and warmed through.
  4. Reduce heat to low. Add cottage cheese salt and black pepper then stir gently until creamy and evenly combined like buttered cottage cheese noodles.
  5. Remove from heat and sprinkle chopped parsley over the top before serving.

Notes

Add cottage cheese over low heat to keep it creamy instead of melting completely into the noodles.
