Ingredients
  

For the Salmon:
  • 4 salmon fillets 6 oz each
  • 1 tablespoon olive oil
  • Salt and pepper to taste
For the Sauce:
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • ½ cup sun-dried tomatoes chopped
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon dried thyme or 1 tablespoon fresh, chopped
  • 1 teaspoon lemon juice
  • Fresh parsley chopped (for garnish)

Method
 

Prepare the Salmon:
  1. Season both sides of the salmon fillets with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Once hot, place the salmon fillets in the skillet, skin-side down if applicable.
  3. Cook for 4-5 minutes per side or until the salmon is golden brown and flakes easily with a fork. Remove the salmon from the skillet and set aside.
Make the Sauce:
  1. In the same skillet, add the butter and melt over medium heat.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the chopped sun-dried tomatoes and cook for another 1-2 minutes, allowing them to soften.
  4. Pour in the heavy cream and stir, bringing the mixture to a simmer. Let it simmer for 3-4 minutes until it thickens slightly.
  5. Stir in the Parmesan cheese and dried thyme, then cook for another minute until the sauce is smooth and creamy.
  6. Add the lemon juice to brighten the flavors, then taste and adjust seasoning if needed (add more salt or pepper as desired).
Combine and Serve:
  1. Return the salmon fillets to the skillet, spooning some of the sauce over the top of the fish. Let the salmon simmer in the sauce for 2-3 minutes to warm through and absorb the flavors.
  2. Remove from heat and garnish with fresh parsley.
  3. Serve immediately, paired with your favorite sides like roasted vegetables, mashed potatoes, or a fresh green salad.
