  • 8 Fresh Mint Leaves
  • 3 oz Club Soda
  • Ice cubes
  • Mint sprig for garnish
  • Lime wheel for garnish

Method
 

  1. Chill a highball glass with ice and set it aside.
  2. Add mint leaves and simple syrup to the glass.
  3. Muddle gently just until the mint releases aroma, without tearing the leaves.
  4. Add lime juice and fill the glass with fresh ice.
  5. Pour in club soda slowly to keep the bubbles lively.
  6. Stir gently with a bar spoon to combine.
  7. Garnish with a mint sprig and a lime wheel.

Notes

  • Clap the mint sprig before garnishing to release aroma. This adds freshness that replaces the bite usually provided by alcohol.
  • Serve in a highball glass over fresh ice to showcase the mint, lime and sparkling bubbles.
