  • 1 large Butternut Squash about 3 lbs, peeled, seeded, cubed
  • 2 tbsp Extra-Virgin Olive Oil
  • 1 large Yellow Onion diced
  • 3 cloves Garlic minced
  • 3 cups Low-Sodium Vegetable Broth
  • 1 cup Unsweetened Coconut Milk
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground Nutmeg
  • 1/2 tsp Smoked Paprika
  • 1 tbsp Maple Syrup
  • Salt and Black Pepper to taste
  • 2 tbsp Unsalted Butter
  • 2 tbsp Fresh Thyme Leaves

Method
 

  1. Preheat the oven to 400°F (200°C). Spread the cubed butternut squash on a baking sheet, drizzle with olive oil, and roast for 30–35 minutes until tender and lightly caramelized at the edges.
  2. Heat butter in a large Dutch oven over medium heat. Add the onion and sauté until soft and translucent, about 5 minutes.
  3. Stir in the garlic and cook for 1 minute until fragrant.
  4. Add the roasted squash to the pot and stir well to combine with the aromatics.
  5. Pour in vegetable broth and bring the mixture to a gentle simmer for 10 minutes.
  6. Add cinnamon, nutmeg, smoked paprika, maple syrup, salt, and black pepper. Stir until fully blended.
  7. Remove from heat and blend the soup until completely smooth using an immersion blender.
  8. Stir in coconut milk and fresh thyme. Adjust seasoning if needed.
  9. Warm gently for 2–3 minutes before serving, without boiling.

Notes

Roasting the squash instead of boiling it deepens the natural sweetness and gives the soup a richer, more complex flavor. A small splash of apple cider vinegar at the end can sharpen the sweetness if it feels too heavy.
