Cilantro Lime Rice

- Rinse the rice under cold water until the water runs clear and drain.
- In a heavy-bottomed pot, heat olive oil over medium heat. Add the rice and sauté for 1-2 minutes until lightly coated.
- Pour in hot water, add salt and black pepper, stir once, and bring to a gentle boil.
- Reduce heat to low, cover tightly, and simmer for 15 minutes until water is absorbed.
- Remove from heat and let the rice rest, covered, for 5 minutes.
- Fluff rice with a fork, then stir in chopped cilantro, lime juice, and lime zest evenly.
- Serve immediately, garnished with extra cilantro if desired.
Notes
Adding lime juice after the rice rests preserves the bright, fresh flavor and prevents the rice from becoming mushy.
