Ingredients

  • 2 packs Instant Ramen Noodles
  • 1 tbsp Neutral Oil
  • 3 Cloves Garlic
  • 1 tbsp Chili Garlic Sauce
  • 1 tsp Red Chili Flakes
  • 1 tbsp Light Soy Sauce
  • 1 tsp Brown Sugar
  • 1 tsp Rice Vinegar
  • 1 tsp Toasted Sesame Oil
  • 2 Green Onions thinly sliced
  • 1 tsp Toasted Sesame Seeds

Equipment

  • Saucepan
  • Skillet
  • Tongs
  • Mixing bowl

Method

  1. Boil the ramen noodles in water until just tender. Drain well and set aside keeping a tablespoon of noodle water for spicy instant ramen texture.
  2. Mix chili garlic sauce, soy sauce, brown sugar and rice vinegar in a small bowl until smooth.
  3. Heat neutral oil in a skillet over medium-high heat. Add minced garlic and cook until fragrant and lightly golden.
  4. Add cooked noodles to the skillet. Pour in the sauce and toss continuously until evenly coated and glossy like chili garlic ramen.
  5. Add a splash of reserved noodle water if needed to loosen the sauce and help it cling to noodles.
  6. Remove from heat and drizzle sesame oil. Garnish with green onions and sesame seeds before serving.

Notes

Toss noodles over high heat briefly so the sauce emulsifies and coats each strand instead of pooling at the bottom.
