Ingredients
  

  • 2 cups Romaine Lettuce chopped and crisp
  • 1 large English Cucumber thinly sliced and drained
  • 1 cup Cherry Tomatoes halved
  • 1 cup Cooked Chicken Breast diced and warm
  • 1/4 cup Red Onion finely sliced
  • 2 tbsp Fresh Parsley chopped
  • 1/3 cup Plain Greek Yogurt
  • 2 tbsp Fresh Lemon Juice
  • 1 tbsp Dijon Mustard
  • 1 tsp Honey
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Toasted Almonds chopped

Method
 

  1. Wash the Romaine Lettuce thoroughly and spin dry until crisp.
  2. Slice the cucumber thinly and sprinkle with a pinch of salt; let drain in a colander for 5 minutes to remove excess water.
  3. Halve the cherry tomatoes and finely slice the red onion.
  4. Dice the cooked chicken breast into bite-sized pieces.
  5. In a small bowl or mason jar, whisk together Greek yogurt, lemon juice, Dijon mustard, honey, salt, and black pepper until smooth and creamy.
  6. In a large mixing bowl, combine lettuce, cucumber, cherry tomatoes, red onion, chicken, and parsley.
  7. Drizzle half the dressing over the salad and gently toss, adding more dressing as needed to coat evenly.
  8. Sprinkle toasted almonds on top for crunch and serve immediately.

Notes

Keep the dressing separate if prepping ahead to maintain cucumber crunch. Toss just before serving.
